Mallory Gibbons has always wanted to run a bakery.
If you had told me, little Mallory, the girl who spent too much time doodling cupcakes in her school notebooks that she’d one day own a bakery she probably would’ve laughed and then asked if you wanted sprinkles on that dream. Growing up, I’ve always had this vision of a bakery that wasn’t just about selling treats, but about creating a space where people feel good…a place where you can walk in, smell something amazing, and instantly feel like you belong, even if you just stopped by to say hi and chit chat…that was the dream.
After baking out of her home for some time, that dream has become a reality. In November of 2025, Mallory officially opened Mal’s Bakehouse inside The Courtyard at 320 East Main Street. Things have been going well and Gibbons says, speaking at Carmi Kiwanis Thursday, that expansion has not only already happened, but is also on the horizon again.
We’ve already expanded once and now we’re planning something bigger…like clear your calendars and maybe grab your stretchy pants bigger. Our mission is to get the community of Carmi more involved to create a space where people can come together with friends and family, where we can promote the talents of community members, where we can offer people the opportunity to learn, dream, and believe that anything is possible.
From donuts and cinnamon rolls to cookies and cakes plus lunch options including soups, wraps, and salads, the local bakery is firing on all cylinders. In addition to daily fare, Mal’s also offers custom orders and can provide food for events.
